I got to sleep in and then Moose and Bugs joined me for some snuggles and a little Winnie the Pooh.

Today instead of going anywhere, we got busy in the kitchen! Bugs and I put BBQ Chicken and Cornbread Casserole in the crockpot. It was so good last time, I made more and cooked it in the 6 qt.
During naptime, I made black bean burgers for the freezer. I love Morningstar Farms version and I thought surely I can make my own without as many additives and for at least 1/2 the cost! I followed the recipe as a guide using steamed yellow squash and green peppers instead of carrots and dry beans instead of canned. After I got everything mashed together, I baked them at 350 for 15 min, which really firmed them up.
This only made 6 large burgers, but I wanted to wait and see how they turned out before I made more. And more, I will definitely be making! They are fantastic! Next time, I'm adding corn. I meant to this time and totally forgot.
The kids loved the peach popsicles I made after peach picking. So after naptime, we made some banana fudge pops. I put a squirt of choc syrup in the bottom of each mold and then added a blend of vanilla soy milk, bananas and mini choc chips. I've ordered more molds and we can't to try lots of different flavors!
Next up was gluten free apple zucchini spice muffins. I followed the directions on a Namaste Spice Cake Mix but used slightly less oil and added 1 cup of shredded zucchini and a chopped apple.
After today, I'm ready to go to work tomorrow! Katie is 2yrs old, a girl and the middle child....that's one lethal combination!

Looks like you've had lots of help in the kitchen and with composting. All are so much fun. The muffins looks so GOOD.... :)
