Intimidated and Angry

I really want Katie to have a cake for her birthday. Cherrybrook Kitchens makes lots of products for people with food allergies. However, the only cake mix that is wheat and dairy free is chocolate. Chocolate is a known reflux trigger, so I just don't feel like it'd be wise to feed it to her.

I've been googling and there are tons of recipes so I can make my own cake for her from scratch. Only, I'm a little intimidated by all the ingredients; sorghum flour, potato starch, and tapioca starch. Really? Where do I even buy those?

Eric was at Babies R Us this afternoon hoping to find more of the only cracker that she can eat. They've been out of stock since we bought every box almost 3 wks ago. He said he was looking at all the tons of different baby foods and toddler snacks and just felt angry because none of it is safe for her.

It's really hard not to be angry.

If you need any cake ingredients let me know: I can get and mail anything to you from here in hippie heaven.

If I were there I would bake us a cake since we are cool enough to have the same rocking birthday.

I can only imagine how difficult all of that must be. I've never dealt with food allergies and whenever I see other people do it I can't help but wonder how they can do it. I suppose when you must, you must. But obviously that doesn't make it easy.

I hope you're able to get that cake you want for your daughter. Best wishes!

I am so, so sorry. I've got a good recipe that is wheat/egg/dairy free. It uses banana, though, or applesauce. It is also better with citrus, but that can be omitted. I experimented with all sorts of mixes and found that the best all-purpose flour substitute was 3/4 C white rice flour and 1/4 C tapioca flour for 1 C regular flour.

There's a place on Central that I always go to for things like that called Food for Thought. Try calling. I bet they have that. They have all kinds of wheat and gluten free stuff. That's where I got my ingredients for my low carb bread in my bread machine. There's another natural foods store (I think that's what it is) right across the street if they don't have what you want. I'm sorry you're dealing with this. :( I can't believe Katie is coming up on one already!

Beebs loves those Mum Mums! A WalMart Neighborhood Market thing here has them and I've never seen them anywhere else. I've seen the label for 'em at Babies R Us for they're never in stock. heh. Can you buy 'em from their website or from Amazon I wonder? Maybe I could ship you a huge box of 'em. It'd certainly be cheap to ship since they weigh nothing.

Can't believe it's almost a year. Wow!!


Also I can't imagine the stress of scouring every single thing you want to feed her. I'm sorry. I hope you find a really great idea for the birthday cake! You're a great mama.
