With Konny's love of muffins, I'm always looking to switch it up a bit because I get bored making the same ones over and over and over. I've also discovered that mini muffins are a much better fit for my sweet little man. This way I'm not finding half eaten crusty muffins in random places throughout the house. So it's really a win win thing we have going here with mini muffins.

I came up with this recipe similiar to morning glory muffins, only banana instead of apple and craisins instead of raisins.
These are super easy and super yummy!
1 1/4 cups gluten free flour (or all purpose)
1/2 cup sucanat (or brown sugar)
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp ground nutmeg
1 tsp cinnamon
1/2 tsp sea salt
1/2 cup oats
2 tbsp ground flax
1/2 cup craisins
1/4 cup oil
1 egg
1 tsp vanilla
1/2 cup coconut milk (or desired milk variety)
1 cup of grated carrot
1 banana, mashed
Preheat the oven to 400 degrees.
Wisk dry ingredients in a large bowl. Add cranberries.
In a seperate bowl, wisk oil, egg, milk, carrots and banana.
Pour wet ingredients into the bowl with the dry ingredients and stir until just combined.
Bake 15 min for mini muffins or until a toothpick comes out clean.
Makes 2 dz mini muffins. I haven't made regular muffins yet, but I would guess 25 min. for a dz regular size muffins.
While I have made these too many times to count, Konnor seemed perplexed as to why there were craisins in his muffins. He enjoys craisins and raisins as a snack but apparently (hopefully temporarily) has decided he feels adversely them in his baked goods. I could just leave them out, but I've been brainstorming another recipe. Can't wait to share!
