Adventures in Gluten Free Baking

After my big 2lb blueberry purchase, I was looking for ways to use them up and since I had a couple zucchini's from Dolly, I decided to make more bread. Doesn't Blueberry Zucchini Bread sound awesome?! I halved the sugar, 1/4 cup brown and 1/4 cup organic cane. I also substituted Namaste Perfect Flour Blend. I cringed adding all that oil as I usually use applesauce instead, but I'm always nervous to make too many changes when going gluten free. I'll have to try it next time and see what happens. This bread turned out super! I'm almost tempted to say it's better than the zucchini bread recipe my mom gave me!


Still needing to use up more berries, I quickly got my chance to leave out the fat with a recipe for Banana Blueberry Bread.

I used applesauce, Namaste Perfect Flour Blend, and 1/4 cup brown plus a 1/4 cup organic cane instead of agave nectar. It did take almost the whole 60min to bake and was almost too moist. I'm sure this has to do with the lack of fat and gluten. It still tasted great though and we ate it all up without a crumb left behind!


This afternoon, Katie woke up really cranky from her nap (not that it's unusual), so I decided we needed some brownies. I had an Arrowhead Mills mix that we'd never tried, so we set to work. I cut the oil back to 1/3 cup instead of 1/2 and then noticed the box said I could use applesauce instead. Duh! We'll do that next time. The kids had a lot of fun mixing it up and adding M&Ms on top.

They were delicious! Up until now, we'd been partial to Betty Crocker's GF Brownie mix, but this one takes the cake! Way better!



Before I went swimming on Monday, I stopped by Walgreen's for toilet paper and free jello. I was super happy to score Cheerios for $1/box while I was there! My total was $2.99.


I'm headed to Dillons tonight and I can't wait because I have a LOAD of coupons to use and there's some great sales going on!

I'll have to try out your bread recipe this weekend. We just bought 5 pounds of blueberries today. :) Blueberry pancakes for breakfast tomorrow.

Looks like the kids had a great time cooking and eating!
