Crockpot Day 20...Sometimes I get a fantastic idea

That turns out to be not so fantastic. Awhile back, I got 10lbs of potatoes for crazy cheap. I'd yet to do anything with them, so I thought it'd be super to shred them up and freeze them....ta da, homemade hash browns!! Well, I got through 5lbs and my arm felt like it was about to fall off, so I stopped. If I do this again, I would say some kind of electric or rotary grater is in order!

I did put 2 bags of 4 cups each in the freezer.


The rest of the potato shreds (I didn't even measure) went into my crock. Here's what else went in...

cubed ham
chopped green pepper
shredded cheese

Then I whisked together the following and poured it on top...

milk
sour cream
eggs
salt
pepper

I can tell you that I used 4 eggs and 1/2 of the green pepper, but the rest I didn't measure. I wish I would have added some onion.


This cooked on high for about 3 hours. Naturally, Katie wouldn't touch it and even Kelton wasn't crazy about it. E and I love it though. Delicious!! I can't wait to make it again!


Our sweet Konnor was 4mo old Sunday. Last week, he measured 23.5in and 14lbs 6oz! Comparably, Katie was 24.25in and 14lbs 3oz. Kelton was 25.25in and 15lbs 12oz. My kids keep getting shorter!! We also saw a dermatologist for his horrible eczema which dramatically improved after the first application of the Rx ointments. He seems a bit happier too, but still isn't napping and that makes me anxious since I start back to work on Thurs!


And since I was able to get a great deal on them,
we had to have some of the new Huggies Jeans Diapers!


This morning Katie picked out her dress and then added boots and a tutu to complete the outfit. We can't ever be to sure what she's going to have on lately.


Kelton's been working on riding his bike and has picked it up really quickly! We're super proud of him!!



I didn't get my shopping in over the weekend, so I managed to get to Dillons and Target last night after swimming. I picked this stuff up at Target for $25.99. Would you believe that Kid's Boost drink is seriously $9.79 without coupons? Crazy! I paid $1.79.


I do want to snag some Neutrogena at Walgreens with the RR deal they're running right now and next week, I'm hoping to do very minimal shopping and use up some stuff out of the freezer. Crockpotting again tomorrow!

Good luck with returning to work! Don't you jsut wish we could all stay at home. Konner is getting so big! :) I'm glad that I'm not the only one with a non-sleeping baby! :)

somehow I missed this post! can't believe how Kelton has the bicycle riding down now. He'll have so much fun riding... Katie's outfit is - quite unique!!! and Konnor is always a cutie...
