Martini and Rossi

We always have a bottle of champagne on our anniversary. This year, I was dx with c diff on that day, so we didn't exactly get to celebrate. So Friday night, we finally got to have our toast!

Konnor joined in on the fun.


I also made us a cake in the microwave to enjoy while we watched a movie. Yep, in the microwave! You use a Pampered Chef stone bundt pan. (I have a feeling my friend Angela is going to want to borrow mine!) You mix up the cake like normal and pour it in the stone. Then scoop a tub of frosting over the top. Don't stir.


Microwave for 12min or until the edges start to pull away from the side of the stone. Let cool for at least 20min, turn out onto a plate and enjoy!


I've been doing this for years. I've used all kids of cake flavors and frostings. They turn out great every time....except this time. I like to use applesauce instead of oil when I'm baking to cut out a little fat. Apparently, this doesn't work that well when making a microwave cake. It basically turns the frosting into total liquid. E said it serves me right for always trying make things healthier. Okay, I've learned my lesson. So, it looks like crap, but it still tasted good and as usual E ate a large portion of it overnight.


Speaking of overnight, Mr Kon Kon didn't sleep worth a damn Friday night. Which means the horrible headache I had didn't go away so we didn't take Bugs to Build a Bear like we'd planned and we missed out on a BBQ with friends. After dinner it was a bit better and we did a little impromptu fishing with Pete. Katie absolutely loved it and I'm kicking myself for not having the camera to catch all her cuteness.

I did remember the camera on our walk and
trip to the park this evening though!!








No crockpotting this weekend, but I did get my shopping in. All in all, I spent $95.89 and saved $102.59. Only Walgreen's and Target were picture worthy.

This is the 5th and 6th bottle of Shout I've bought recently. It's super cheap right now and I have coupons to go back for 2 more! For this deal, use $1/1 Target printable and .55/1 from 05-02-10 SS insert. You can find .55/1 peelies on most of the bottles if you don't have the insert. I was also glad to get more waffles. When I'm working, Thurs nights are always waffles at our house. The kids love it! Total was $2.97.


Eric and Kelton eat more cereal than anyone I know. I'm constantly buying tons of it. Thank goodness there are always great coupons to get it cheap! Total was $11.82.


This is my last full week at home before I go back to work.
I can't believe Konnor is closing in on 4 mo old!

Happy Anniversary...again! I'm glad you were finally able to enjoy your champagne! I've never been able to drink much of the stuff. Gives me a horrible headache. But the bottle is pretty :)

That cake looks delish too! I've made brownies in the microwave, but it's been a while. I will have to try this...minus the applesauce substitution!
