Earth Day 2012


To celebrate Earth Day this year, we finally got around to getting our garden started. Even though actually, it had already started on it's own! Lots came back from last year.


We decided to leave vining plants in the bed. We put the tomatoes and peppers in pots. We plan to use some gutters for onions, spinach, lettuce and herbs.



We did have to thin the bed a little and the kids had fun hauling it to the composter.



Our niece, Acacia was with us for the weekend. She and Katie had tons of fun together. When digging up some plants, we found a worm. They named it rainbow.



We also uncovered a snake and a centipede!



Sunday afternoon was spent at immediate care after Konny fell and bit though his tongue. Blood doesn't bother me and obviously blood in the mouth is something I'm quite used to, but when it's pouring out of your baby's mouth, it's a bit unsettling! Kids are so resilient and the mouth heals very quickly, so thankfully his suffering didn't last long!


We did end the day on a happy note with our traditional Earth Day dessert...dirt and worm cake! Mmmmm!

Book Review : Unjunk Your Junkfood


I love Naturally Savvy. Their website and newsletters are packed with tons awesome info. When they released their first book, UnJunk Your Junk Food, I knew I had to read it.

The first few chapters are very informative, providing information on basic nutrition and different dangerous and potentially dangerous ingredients and additives.

The next 8 chapters are different categories of junk foods such as candy, drinks, cookies, chips, etc. A common brand name item is shown and then a healthier alternative.

There's a removable page in the book containing the worst ingredients and ingredients to beware of. This would be great to keep in your purse or wallet to refer to when shopping. There is a printable version of this list plus bonus material available when you register online at Naturally Savvy.

Naturally Savvy broke down that list into the Scary Seven which includes hfcs, trans-fats, msg, artificial flavors, artificial colors, artificial sweeteners, preservatives.

I have said for a couple years now that although food allergies aren't exactly fun, it has also been a blessing for our family in numerous ways. We eat so much healthier than we would otherwise. I am happy to say that just because we have to avoid so many processed foods, I didn't find too many of the scary seven ingredients in our cabinets.

This is our snack/catch all cabinet. Holiday candy gets thrown up here, any other candy, snacks and crackers.


When it comes to candy, we do love our Yummy Earth Suckers but our cabinet also always has Smarties candy, sometimes M&Ms and right now jelly beans because of Easter. All three are full of artificial colors and flavors.

My favorite candy (chocolate covered pomegranate pieces) looks fairly inconspicuous at first glance, but if you read slowly, natural flavors is listed twice! There's also canola oil and soy lecithin, both of which are among the most GMO ingredients there are.


Honestly, I don't know what know what's in the Ritz crackers. I'm sure it's not pretty and they probably need thrown out since I'm also sure they're probably expired as we literally just do not eat buns or crackers with meals anymore.

Our craisins aren't bad. I'd rather have some sugar than any artificial sweetener.


When it comes to things like chips, due to food allergies we don't have any that aren't just corn, corn oil and salt. I was disappointed and surprised to see our taco shells have artificial colors.


Surprisingly enough, Konny's little Gerber puffs aren't too scary.


Our cereal cabinet doesn't look too bad right now. I have to admit it's not uncommon to find artificial colors up here. All 3 kids are able to eat Trix and when I can get them for $1 or less/box, I buy them. There is sometimes Fruity Pebbles too since they're gluten free. I hated to see BHT added to several of these boxes.


I didn't stop looking at labels with just our "junk" food and took a look at some of my favorite soups too. (I think it'd be awesome for Naturally Savvy to write another book detailing other convenience foods like soups, hamburger helpers, mac and cheese, etc.) The first soup is an old favorite. It doesn't appear nearly as appetizing looking at ingredients like autolyzed yeast extract, naturals flavors and hydolyzed soy protein. The second soup is another favorite of mine and has a much better ingredient list. Maybe I should check into the chicken noodle in this brand!



After reading this book, I feel even more determined to seek out healthier options for feeding my family. I noticed just yesterday at the grocery store, I was reading ingredient lists on everything I picked up. Instead of just scanning for our known allergens, I was keeping an eye out for preservatives too.

Before food allergies, when looking at labels, my main concern was fat, calories, etc. Now, I rarely look at that info because I'm focused on ingredients. That is what this book is really about, focusing on ingredients. Even if the product you're buying looks like it might be healthy on the nutrition panel, if it's full of bad ingredients, it's not such a good choice after all!

I think this book would be beneficial and informative for all my friends (not just my hippy health conscious friends). In fact, don't be surprised if some of y'all get a copy wrapped up at Christmas this year!

Cheesy Potatoes - Allergy friendly!

When we first started down this food allergy journey, I felt pretty sad knowing so many dishes were just out of the question, like nearly every casserole I'd grown up on. Goodbye comfort foods!

Now 4 years in and I feel like I'm almost a pro. I say it all the time, but it is so much fun for me to take a favorite recipe and make it safe for everyone. When Easter was approaching, I knew I needed to tackle cheesy potatoes, known to many as hashbrown casserole.

Gluten, soy, and dairy free cheesy potatoes,
HERE WE GO!

I gathered my ingredients....

Usually I make my own hashbrowns and freeze them in batches. Since we were out, I was thrilled to learn that Ore-Ida's are safe!


1 bag (approx 4 cups) hashbrowns
1/2 onion, chopped
1 tsp salt
1/2 tsp pepper
1 can cream of chicken soup (homemade allergy friendly version)
2 cups plain So Delicious coconut yogurt
1 bag Daiya cheese
2 cups gluten free corn flakes, crushed
1/4 cup Earth Balance soy free/dairy free margarine, melted

Preheat oven to 350. Coat a 9x13 baking dish with cooking spray.

In a large bowl, stir together all ingredients except corn flakes and butter until well combined. Spread into baking dish.


Mix cereal and butter, then sprinkle over top of potato mixture.


Bake for 45 minutes (uncovered) until bubbly.


Enjoy! They were delicious! Everyone (including my extended family members without food allergies) liked them! Mmmmm.

Itsy Bitsy Ballerinas

We had orginally planned on Katie playing soccer this spring, but didn't realize she was a few months shy of the age cutoff. Luckily the rec center was offering a new class called Itsy Bitsy Ballerinas. Since we've had spotty success on getting her to participate in tumbling, I wasn't sure how she'd do.

I am happy to report that she loves dance class. Like seriously, LOVES it. She's doing well remembering her positions and is a very attentive student (and probably the only bitsy ballerina to have worn a different outfit to every class).

If she continues to do well and really enjoy dance, we want to look into taking her to a studio to further her skills.





The only downside? We're going through tights pretty quickly! Poor girl was super upset when her white pair got snagged.

Easter Weekend

Hallelujah, Risen Lord, the only One I fall before!


Because hand, foot and mouth disease was been present in our house for the previous week, we opted out of Easter service Sunday morning. As much as we would have loved to attend, I would feel horrible if by chance we started an outbreak in the nursery. Luckily, Eric and I were at least able to attend the passover service on Friday evening.

Since I feel compelled to make everything I see on pinterest, I made a couple little Easter banners while Konny rested after his ear tube procedure on Friday. Now I just have to find a way to store them so that the don't get too crumpled before next year.



Saturday we dyed eggs and then immediately, they wanted to eat them. Fine by me! A whole egg is sure a healthy snack! If I can pry that salt shaker out of Katie's hands, that is.








Since we stayed home Sunday, we hung out in our jammies much later than normal and just enjoyed the time together. The kids were pretty excited that the Easter bunny came.








After naps, Layla came over for some egg hunting. She and Kelton really enjoyed hiding eggs for Katie and Konnor. The weather was beautiful! We couldn't have asked for a better day!
