Crockpot Day 1 and Mother's Day

I was so excited to start my week of crockpotting this morning. I chose Enchilada Stacks for my first recipe. The recipe calls for cheese and black olives, but I used chopped onions, shredded turkey and cheese. Naturally I had to put some meat in because E is the ultimate carnivore as well as his mini-me (Katie).
It went together really easily
and the sauce smelled good enough to drink!


Konnor hung out with me while I was getting it ready. I've recently gotten out the toy bar for his bouncy and he loves grabbing the rings.


My only issue was that I used a bigger crock pot and didn't adjust cooking time, so I had to turn it off for a little bit and then back on to finish cooking right before the boys got home.


The tortillas basically all broke apart, but it was still delicious. I will definitely make this again! It could easily be doubled to feed more people. Maybe next time I'll make queso in my small crock pot to eat with it!!

Mother's Day weekend was wonderful! Friday evening I got a few laps in at the pool and ran to Dillons. My total was $46.96 with $67.64 in coupon savings!


For the past few years, the Saturday before Mother's Day, I have spent in Wichita with my mom. We shop, go out to eat and this year pedicures! We stopped in once so I could feed Konnor and go to Moosey's soccer game. We had a great time for very little. I'm pretty sure we used a coupon everywhere we went! My Entertainment Book definitely paid for itself that day!

And speaking of pedicures, teaching a little girl colors is WAY more fun than teaching a boy. She has all the warm colors down but still confuses the cools sometimes.


Sunday, we BBQ'd as always even though the weather was yucky. Kelton picked out some flowers for me and even paid for them with his own money!


Things like this, I'll treasure forever!


I also received Dr James Dobson's new book, Bringing Up Girls. I knew he had written Bringing up Boys, but Kelton was so easy, I thought I had it all figured out. Needless to say, Katie is a different story and I really look forward to reading it.


Tommorrow is crockpot day 2 and sometime this week, my next blog on couponing.

Look at all those pretty colors for Miss Katie! We might have to have a nail painting party for the girls.

Let me know how the book is. Lord knows I need help! LOL

I just might have to get that book! Especially having two girls...does it happen to say anything about dealing with the sassiness of terrible two's? :-)

I believe Alfredo got my necklace from "brag about it" on etsy. I'm not positive but I think that is what I saw.

Hope things are still going well for you and the kiddo's! I'm going to swipe some crockpot recipe's....perfect for when I go back to work!
