Shortly after that speech, my uncle received a pancreas transplant. He'd had Type 1 Diabetes nearly his whole life, but now thanks to the generosity of another individual and their family, he lives insulin free. That's was 10 yrs ago (seriously, I'm getting old) and I was reminded of it this morning by his fb status.
So if you haven't already, make sure you sign the back of your license and that your family knows you wish to be a donor!
Since we had plenty of leftovers from Mon & Tue night, we had dessert in the crockpot today. I had orginally planned this for Friday, so maybe we'll have to have 2 dessert nights!
For tonight, I decided to go with one of my all time favorites.....Pumpkin Pie!! I almost always make my pumpkin pie without crust since I don't particularly care for it and that is just what this recipe calls for! SCORE!
Because I seriously love me some pumpkin pie (if you've never mixed the filling with hot oatmeal, you're missing out!!) and E's middle of the night snacking habit, I decided to double the recipe. I used a little less sugar, only 3 eggs, no butter and Hodgson's Mill Gluten Free Multipurpose Baking Mix.
Speaking of gluten free baking mix, a friend recently alerted me that Bisquick is coming out with a gluten free version. I'm excited to try it! I picked up some of the gluten free hamburger helper the other day.
This cooked for about 6 hours and the smell was amazing!! Apparently my crock has a hot spot on the left because it got much darker on that side.
I served it with some soy whip I bought before Katie started having dairy. It was delicious! The consistancy was a bit more cakey than I expected but my taste buds were dancing none the less. There's tons left over. (YEA!!) I might have to try it with some frozen yogurt and mini chocoloate chips.
Katie slept in super late and then took a rather long nap also. She seems much better this afternoon! My handsome little helper wasn't a very good napper today, but was happy as always.

Miss my little man, he looks so big in the picture of him in the seat. All your recipes looks so good and I like how you edit them for your needs and likes.
