Crockpot Day 18, Day 19 and Pee in the Potty!

After what seems like forever, I got the crockpot out Tue morning. My mouth was watering at the thought of Baked Spinach and Cheese Noodles.

This takes a little time to get ready, which really wouldn't have been a huge deal if Konnor had been happy and Katie hadn't been rubbing Cheetos in her hair. :-) My roux got a bit thick and I ended up only using about 1/4 cup of flour instead of 1/3 cup. I also cut the dijon mustard down to 3t instead of 3T because you know, mustard and I aren't the best of friends. I got the sauce all mixed together and had to fight the urge to grab some chips and start dipping. Oh, it looked yummy!


I stirred in the noodles, sprinkled some cheese on top and considered cooking on low, but switched to high like the recipe called for. After removing the cheetos from Katie's hair, I put her down for a nap and returned to find Kelton reading Konnor a book. The chaos that ensued while I attempted to get my crock going was forgotten. I love how much they love each other.



I should have went with my instinct. This seemed dang near done after about 2hrs, so I switched to low and added a couple oz of water. It cooked this way for about 2 more hours and which point, I switched it off and added a bit more cheese to the top.


This definitely needed more liquid or less noodles. I think next time, I'll cut back to 3/4 box of noodles. I used Ronzoni Healthy Harvest Rotini and regular flour for this because I knew Katie wouldn't touch it, so I didn't feel like making the gluten free effort.

I LOVED it and have been enjoying leftovers all week. My mom was here also, she and Eric agreed it needed more liquid and perhaps a bit more salt. We also had salad, which is all Kelton ate.

Although it's blazing hot during the day now, we've had some mild evenings and are getting plenty of use from our new play set.






Today, I really felt in the mood to use the crock again, plus we had something to celebrate!!! This girl pee peed in the potty (and several areas all over the house)



So of course, dessert was in order. I wanted something easy and GF so I headed on over to A Year of Slow Cooking and found Five Layer Brownies. I used Betty Crocker brownie mix and no nuts because I didn't have any and I'm not that crazy about them anyway. I guess that means I made four layer brownies. :-)


My 1.5 qt crock doesn't have a setting, you just plug it in. This cooked for 5 hrs, the last 30 min with the lid off. The edges pulled away from the sides and it smelled fantastic.


The edges were a little more done but not burnt and the middle was delightfully fudgy. I can imagine it would be heavenly with a scoop of frozen yogurt on the top! I'd like to try this doubled in my 4 qt crock for when we have company.


We have a busy weekend ahead!
Not sure if I'll have the crock going or not.

I'm so proud of Katie for going in the potty! That is one challenge that I am grateful to have Debbie for!! Once Mya gets use to everything I think we are going to try again.

I'm sure Katie will do just fine with Konnor at daycare. They are use to each other. Mya always went to daycare while Macy stayed home with me...so she wasn't use to it :-) Mya will be happy that Katie is there and they can play Mommy together. LOL!

can't wait to try that yummy dessert!! and I'm so proud of Katie and the new potty experience! I bet she catches on very fast! Skyped Eric tonite and saw how big Konnor is now - Moose was watching Nascar - Luv his haircut, looks like Daddy!! :) See you on Sat!!!
